SHRIMP TOASTS

  • ½ # raw peeled shrimp minced (light food processor)

  • 4 water chestnuts chopped finely

  • 1 t. salt

  • ½ t. sugar

  • 1 t. cornstarch

  • 1 egg lightly beaten

  • 2 t. chopped scallions – white part only

  • 6 stale slices of bread

  • Vegetable oil

Mix shrimp, chestnuts, etc. Trim crusts off bread.  Spread each slice with 1/6 of
mixture.  Fry upside down in oil for 1 minute (40 seconds works better).  Then
turn and fry a few seconds.  Drain on paper towel and serve warm.
