MEXICAN EGG CASSEROLE FROM ANNE BERSCHBACK

  • 15 eggs

  • ½ # grated Cheddar cheese

  • ½ # grated Monterey Jack cheese

  • 1 pint cottage cheese

  • 1  7 0z can green chilies chopped

  • ½ cup flour

  • 1 t. baking powder

Mix all of the above ingredients and place in a greased 9 x 12 Pyrex dish.  Bake at 350 degrees for 45 minutes.  Serve with:

  • Salsa

  • Sour Cream

  • Chopped green onion
