{"id":943,"date":"2017-03-24T12:36:07","date_gmt":"2017-03-24T12:36:07","guid":{"rendered":"http:\/\/www.margiesrecipes.com\/?p=943"},"modified":"2017-03-24T12:36:07","modified_gmt":"2017-03-24T12:36:07","slug":"ragu-michelle%e2%80%99s","status":"publish","type":"post","link":"https:\/\/www.margiesrecipes.com\/?p=943","title":{"rendered":"Ragu Michelle\u2019s"},"content":{"rendered":"<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>1 small onion, finely chopped<\/li>\n<li>4 ounces\u2019 butter<\/li>\n<li>6 ounces\u2019 prosciutto, thickly sliced, and cut into strips<\/li>\n<li>1 cup dry white wine<\/li>\n<li>8 ounces\u2019 mushrooms, any variety, sliced<\/li>\n<li>1 cup heavy cream<\/li>\n<li>12 ounces\u2019 peas, thawed if frozen<\/li>\n<li>Salt to taste<\/li>\n<li>Freshly ground pepper to taste<\/li>\n<li>1\/2 cup grated Parmigiano<\/li>\n<li>1 pound fettuccine<\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">\u00a0<\/span><strong>Instructions:<span style=\"font-size: large;\">\u00a0 <\/span>Cook Time:\u00a0<\/strong>30 minutes<strong><span style=\"font-size: large;\">, <\/span><\/strong>Serves 4-6<\/p>\n<p>Bring a large pot of salted water to a boil.<\/p>\n<p>In a large skillet over medium heat saut\u00e9 the onion in the butter until it is golden brown. Add the prosciutto and cook for 1 or 2 minutes, then add the wine, and cook for an additional minute.<\/p>\n<p>Next add the mushrooms and allow them to render their liquid. When their liquid has mostly been reduced, slowly add the cream, salt and pepper and cook until slightly reduced, about 5 minutes, Peas should be added during the last couple of minutes. Cook the pasta until al dente (about 2 minutes less than package directions), drain, and add to cream mixture.
