{"id":875,"date":"2016-11-11T21:04:30","date_gmt":"2016-11-11T21:04:30","guid":{"rendered":"http:\/\/www.margiesrecipes.com\/?p=875"},"modified":"2016-11-11T21:04:45","modified_gmt":"2016-11-11T21:04:45","slug":"mayonnaise-%e2%80%93-foolproof-lemon-%e2%80%93-garlic","status":"publish","type":"post","link":"https:\/\/www.margiesrecipes.com\/?p=875","title":{"rendered":"MAYONNAISE \u2013 FOOLPROOF LEMON \u2013 GARLIC"},"content":{"rendered":"<ul>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">1 clove of garlic, minced;<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">4 oil-packed anchovies, minced (optional);<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">1 large egg yolk, at room temperature;<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">1 teaspoon of Dijon mustard;<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">\u00bd cup of extra-virgin olive oil;<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">1 tablespoon of freshly squeezed lemon juice, plus more to taste; and<\/span><\/strong><\/li>\n<li><strong><span style=\"color: #000000; font-family: Times New Roman;\">Salt and freshly ground black pepper.<\/span><\/strong><\/li>\n<\/ul>\n<p><strong><span style=\"color: #000000; font-family: Times New Roman;\">In a small food processor or container of an immersion blender, combine garlic, anchovies, egg yolk and mustard. With machine running, slowly drizzle in 2 teaspoons of olive oil and process mixture until mixture is smooth and starts to thicken, about 2 minutes.<\/span><\/strong><\/p>\n<p><strong><span style=\"color: #000000; font-family: Times New Roman;\">\u00a0<\/span><\/strong><strong><span style=\"color: #000000; font-family: Times New Roman;\">With the machine still running, slowly add remaining olive oil, lemon juice and 1 teaspoon of very hot water. (A small splash from the kettle or tap is the right amount). Process just until mixture reaches a loose mayonnaise consistency. If it curdles or becomes too thick, mix in more hot water a little at a time, pulsing the machine so as to not overmix. Taste and adjust seasoning with more lemon juice, salt and pepper. Serve immediately, using a spoon to drizzle over salad, or cover and refrigerate up to 8 hours.
