PANCETTA FINELY CHOPPED<\/strong><\/li>\n<li><strong>3 GARLIC CLOVES<\/strong><\/li>\n<li><strong>10 SPRIGS ITALIAN PARSLEY, LEAVES ONLY, FINELY CHOPPED<\/strong><\/li>\n<li><strong>2 T. olive oil<\/strong><\/li>\n<li><strong>Salt and pepper <\/strong><\/li>\n<\/ul>\n<p><strong>Soak endive in bowl of ice for \u00bd hour.\u00a0 Drain and dry. Place<br \/>\noil in medium skillet.\u00a0 When warm, add chopped pancetta, garlic and parsley until all the fat in the pancetta is rendered-about five minutes.\u00a0 Stir constantly with<br \/>\nwooden spoon.\u00a0 Season with salt and pepper.\u00a0 When ready immediately pour over<br \/>\nendive, mix well and serve.\u00a0 You can use Kale or arugula with this also, but the endive is the best.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>\u00bd POUND CURLY ENDIVE, CLEANED AND CUT INTO LARGE PIECES 4 OZ.
