{"id":716,"date":"2013-01-22T22:21:09","date_gmt":"2013-01-22T22:21:09","guid":{"rendered":"http:\/\/www.margiesrecipes.com\/?p=716"},"modified":"2013-01-22T22:22:32","modified_gmt":"2013-01-22T22:22:32","slug":"chicken-from-mama-agata","status":"publish","type":"post","link":"https:\/\/www.margiesrecipes.com\/?p=716","title":{"rendered":"CHICKEN FROM MAMA AGATA"},"content":{"rendered":"<ul>\n<li>\n<h1><strong>Prepare at least four days before (and after store in refrigerator for several weeks)<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 bottle white wine<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 sprigs fresh rosemary<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>8 leaves fresh sage.<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>Place the rosemary and sage in a warm oven for a few minutes until you begin to smell the scent and then place them in the bottle with the white wine.<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 small chicken cut into pieces with skin on<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>5 cloves garlic chopped in half<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 t. salt<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 T. dried sage<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 T. dried rosemary<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 cup of herb wine<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 T. Italian parsley chopped<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>Juice of 2 large or 4 small lemons<\/strong><\/h1>\n<\/li>\n<\/ul>\n<p><strong>Heat up a non-stick skillet until very hot.\u00a0 Add garlic andstir with wooden spoon.\u00a0 Do not let it burn.\u00a0 Then add chicken skin side down to hot pan.\u00a0 Chicken should sizzle.\u00a0 Add half the salt, rosemary and sage.\u00a0 Do not turn chicken until under side has caramelized.\u00a0 Then flip and add remaining rosemary, sage and salt.\u00a0 Caramelize this side.\u00a0 Then lower flame, cover pan and cook for about 20 minutes.\u00a0 Uncover and add wine to pan.\u00a0 Continue to cook until wine<br \/>\nreduces.\u00a0 At the end, just before serving add chopped parsley and fresh lemon juice.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Prepare at least four days before (and after store in refrigerator for several weeks) 1 bottle white wine 2 sprigs fresh rosemary 8 leaves fresh sage.
