{"id":321,"date":"2011-08-13T18:21:16","date_gmt":"2011-08-13T18:21:16","guid":{"rendered":"http:\/\/www.margiesrecipes.com\/?p=321"},"modified":"2011-08-13T18:21:16","modified_gmt":"2011-08-13T18:21:16","slug":"grits","status":"publish","type":"post","link":"https:\/\/www.margiesrecipes.com\/?p=321","title":{"rendered":"GRITS"},"content":{"rendered":"<p align=\"center\"><strong>(To order call 1-877-RICE -4-YOU or <a href=\"http:\/\/www.carolineplantationrice.com\/\">www.carolineplantationrice.com<\/a>)<\/strong><strong>\u00a0<\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Creamy White Grits\u00a0 for 8<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h1><strong>12 cups chicken broth<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>4 \u00bd cups coarse stone-ground white grits<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 cup heavy cream<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>Salt and white pepper to taste<\/strong><\/h1>\n<\/li>\n<\/ul>\n<p><strong>Bring chicken broth to boil.\u00a0 Slowly pour in grits stirring constantly.\u00a0 Reduce heat to low and continue to stir so grits don\u2019t settle to bottom and scorch.\u00a0 In 5 minutes, grits will plump up and become a thick mass.\u00a0 Continue to cook for about 20-25 minutes stirring frequently.\u00a0 Grits should have absorbed all of the stock by now and become soft.\u00a0 Stir in heavy cream and cook another 10 minues.\u00a0 Should be like creamy oatmeal.\u00a0 Season with salt and pepper.<\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Tasso Gravy<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h1><strong>4 T. butter<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>\u00bd cup sliced Tasso cut in 1 inch strips<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>\u00bd cup flour<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>4 cups chicken broth<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 T. finely chopped parsley<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>Salt and white pepper to taste<\/strong><\/h1>\n<\/li>\n<\/ul>\n<p><strong>Melt butter over low heat.\u00a0 Add Tasso and saut\u00e9 for 1 minute browning slightly.\u00a0 Make a roux by adding flour and stirring\u00a0 until well combined.\u00a0 Continue to cook over low heat for about 5 minutes until roux develops a nutty aroma.\u00a0 Turn heat up to medium and gradually add 2 cups of the chicken broth, stirring vigorously until broth begins to thicken and is smooth.\u00a0 Gradually add remaining chicken broth stirring constantly until broth thickens into gravy.\u00a0 Reduce heat and simmer over low for 15 minutes to cook out the starchy flavor.\u00a0 Add parsley.\u00a0 Season.<\/strong><\/p>\n<p><strong><span style=\"text-decoration: underline;\">Shrimp and Sausage<\/span><\/strong><\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h1><strong>\u00bd \/3 Italian sausage<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 T. olive oil<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 # peeled and deveined shrimp<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 \u00bd cups chicken broth<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>1 recipe of Tasso Gravy<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 T. chopped parsley<\/strong><\/h1>\n<\/li>\n<\/ul>\n<p><strong>Preheat oven to 400 degrees.\u00a0 Place sausage on baking sheet and put on top rack of hot oven.\u00a0 Bake 10-15 minutes or until sausage is firm and juices run.\u00a0 Cool and cut into bite sized pieces.\u00a0 Heat olive oil in heavy frying pan over medium heat.\u00a0 Add the precooked sausage and brown for 2 minutes.\u00a0 Add shrimp and saut\u00e9 until begin to turn pink \u2013 no longer than 1 minute.\u00a0 Add 1 cup of chicken broth to deglaze the pan.\u00a0 Add the Tasso gravy and one T. of the parsley.\u00a0 Bring up to boil and let simmer for 1 minute.\u00a0 The last \u00bd cup of broth is to be used to thin the gravy if needed.\u00a0 Divide hot grits between 8 warm bowls.\u00a0 Spoon the shrimp and sausage mixture over the grits.\u00a0 Sprinkle with remaining tablespoon of parsley and serve immediately<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>(To order call 1-877-RICE -4-YOU or www.carolineplantationrice.com)\u00a0 Creamy White Grits\u00a0 for 8 &nbsp;
