Dijon mustard<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>\u00bc cup coarse breadcrumbs<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>2 T. chopped fresh thyme<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>\u00bc cup chicken stock<\/strong><\/h1>\n<\/li>\n<li>\n<h1><strong>\u00bd cup heavy cream<\/strong><\/h1>\n<\/li>\n<\/ul>\n<p><strong>\u00a0<\/strong><strong>Preheat oven to 375 degrees.\u00a0 Rub chicken breasts lightly<br \/>\nwith oil and season with salt and pepper.<\/strong><\/p>\n<p><strong>Combine 2 T. butter with the mustard; reserve 2 t. for sauce.<br \/>\nMelt remaining 2 T. butter; mix with breadcrumbs and thyme and season<br \/>\nwith salt and pepper.<\/strong><\/p>\n<p><strong>\u00a0<\/strong><strong>In a large skillet heat oil over medium-high heat.\u00a0 Sear chicken skin side down until crispy about 5 minutes.\u00a0 Remove from heat.\u00a0 Smear with mustard mixture and sprinkle with breadcrumbs.<\/strong><\/p>\n<p><strong>Transfer skillet to oven and roast until chicken is cooked through and top is golden brown, 15 t 20 minutes.<\/strong><\/p>\n<p><strong>\u00a0<\/strong><strong>Transfer chicken to serving platter.\u00a0 Add stock and cream to skillet over medium heat, and stir with wooden spoon until creamy and reduced to \u00bc cup, about 3 minutes.\u00a0 Remove from heat, and stir in reserved mustard mixture.<br \/>\nStrain through a fine sieve and serve with chicken.\u00a0 Garnish with thyme.<\/strong><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Serves 4 4 boneless chicken breasts, skin on 2 T olive oil, plus more for breasts Coarse salt and freshly ground pepper 4 T unsalted butter softened 2 \u00bd T.
